In Eritrean and Ethiopian Orthodox tradition, many days of the year are observed as fasting days — when meals are entirely plant-based. Over generations this shaped a rich, deeply flavoured vegan cuisine built on lentils, split peas, chickpeas, greens and warming spices.
The result is beyaynetu — a colourful platter of vegan stews and vegetables served on injera, made to be shared. At Asmara Bella, our plant-based dishes aren't an afterthought; they're at the heart of who we are.
